Meatless Monday: Muffaletta, Vegetarian Tacos, White Bean Bruschetta, Fettucine with Lima Beans + Fall Salad

Meatless Monday is a nonprofit initiative of The Monday Campaigns.  Their goal is to help reduce meat consumption by 15% to improve personal and planetary health.

This week I'm featuring recipes that are available online so you can try them too! The recipes marked with a * are vegan.  The rest are vegetarian.


Vegetarian Tacos with Spinach, Corn and Goat Cheese from Real Simple 
Quick and yummy!


* Must Make Muffaletta from VegNews
It may look like just a sandwich, but it's actually made on a loaf of bread and serves 4 people. I didn't use pepperoncini 'cause the people I was cooking for aren't spicy food fans.




* White Bean Bruschetta from VegNews
Surprisingly filling. We ate it with another appetizer and a salad, and were full.




Fettuccine With Lima Beans, Peas, and Leeks from Real Simple 
Another quick and delish dish. 



Fall Salad by Tyler Florence from the Food Network
This salad was freakalicious. I used spinach instead of mixed greens and added dried cranberries. I used a red pear the first time I made it, and a bosc pear the second time I made it. Both were tasty.

  1. Britt, would you consider doing a post for men who need to eat more vegetables? No way around it, active men should eat about 12 oz a day, and most don't get that. We still like meat, bread, and potatoes. Any way for men to make a quick vegetable dish, a tasty vegetable medley, or tips for their partners, would be great. If it's a post on your blog, I'll reblog it to mine, (or you might like to be a guest author for "Men Fighting Fifty," my blog).

    Gosh, I don't really feel qualified to write about cooking, or nutrition beyond sharing what I make at home. You might want to review Jamie Oliver's book, Jamie's Food Revolution. It has all kind of quick, easy recipes anyone can make.
