Un-tuna salad + green salad with balsamic vinaigrette

It has been a fun month so far cooking from Blissful Bites over at the VegCookbookClub. Some of my favorite recipes have been the Un-tuna Salad (see Veggie Goes Vegan's post about it), the Spring Kale Salad with Miso Dressing (see the recipe here), and the Balsamic Vinaigrette.  I've made the un-tuna salad and balsamic vinaigrette twice already.
